New Year, nutritious beginnings: 6 tasty and healthy breakfast recipes to start your day right

As the New Year approaches, it’s time to indulge in wholesome breakfast recipes that kickstart your day on a nutritious note. Ramya B, M.sc, Executive Nutritionist from Cloudnine Group of Hospitals, OMR, Chennai, shares delectable and healthy recipes to ensure a balanced beginning to the day.

1. Pumpkin Paratha and Spicy Mint Chutney

– Pumpkin: 1 cup

– Wheat flour: 2 cups

– Salt: As required

– Sugar: 1/2 tsp

– Oil: 1-2 tsp

Preparation:

1. Cook pumpkin thoroughly and mash it into puree.

2. Mix pumpkin puree with salt, sugar, oil, and wheat flour to form a dough.

3. Roll the dough into thin slices and cook on a hot tawa.

4. For Spicy Mint Chutney, blend mint leaves, garlic, green chillies, coriander leaves, ginger, lemon juice, and salt into a fine paste.

2. Spinach String Hoppers

– Palak leaves: 2 cups

– Rice flour: 2 cups

– Salt: As per taste

– Ghee: 2 tsp

– Hot water

– Onion: 1 cup

– Tomato: 1 cup

– Mustard seeds: 1 tsp

– Dried chilies: 2 nos.

– Coriander leaves: Handful

– Oil: 2 tsp

Preparation:

1. Make a thin puree of palak leaves.

2. Mix palak puree, rice flour, ghee, and salt to form a dough.

3. Press the dough in a circular motion using a hopper press on the steamer plate.

4. Steam and toss with sautéed onion, tomato, mustard seeds, and coriander leaves.

3. Avocado Egg Wrap

– Avocado: 1 no.

– Egg: 1 no.

– Tomato: 1 no.

– Salt: Required amount

– Pepper: 1-2 tsp

– Oregano, parsley: 1 tsp

– Oats: 1 cup

– Water

Preparation:

1. Blend oats, water, and salt into a batter.

2. Cook oats batter on a hot tawa.

3. Make an omelet and assemble the wrap with diced avocado, tomato, and seasoning.

4. Moong Protein Sandwich

– Boiled green gram: 1 cup

– Boiled potatoes: 2 nos.

– Onion: 1 no.

– Dry mango powder: 2 tsp

– Salt: Required amount

– Chilli powder: 1-2 tsp

– Multigrain bread: 2 slices

– Butter: 1 tsp

Preparation:

1. Mix boiled green gram, potato, chopped onion, salt, and seasoning masalas.

2. Toast the sandwich with butter on a hot tawa.

5. Traditional Banana Flower Dosa

– Banana flower: 1 no.

– Toor dal: 1 cup

– Rice: 1/2 cup

– Dried red chilies: 2-3 nos.

– Fennel seeds: 1/2 tsp

– Drumstick leaves: 1 cup

– Onion: 1 no.

– Oil: 2 tsp

– Hing (Asafoetida): 1/2 tsp

– Salt: Required amount

Preparation:

1. Coarsely grind banana flower and keep it aside.

2. Blend toor dal, rice, red chilies, and fennel seeds into a fine batter.

3. Mix banana flower, onion, and drumstick leaves to the batter.

4. Make small dosas and serve with spicy tomato chutney.

6. Jowar Puttu and Traditional Channa Curry

Jowar Puttu

– Jowar millet powder: 2 cups

– Salt: 1 tsp

– Ghee: 1 tsp

– Water: Required amount

– Grated coconut: 1 cup

Preparation:

1. Mix jowar millet powder, salt, and ghee to form a dough.

2. Steam in a puttu maker with grated coconut.

Traditional Chana Curry

– Boiled Black channa: 1 cup

– Fennel seeds: 2 tsp

– Ginger: 1 tsp

– Coriander powder: 1 tsp

– Chilli powder: 1 tsp

– Turmeric powder: 1/4 tsp

– Onion: 1 no.

– Green chillies: 2 nos.

– Salt: Required amount

– Oil: 2 tsp

Preparation:

1. Sauté onion and green chillies, add spices and ginger fennel paste.

2. Cook with boiled black chana and temper with mustard and urad dal.

These recipes promise a healthy and delicious start to your New Year.
